Analytical Brewing began as a dream for 3 guys with a love for good quality craft beer. Many a night were spent analyzing and discussing the unique qualities of different craft brews both at home and when traveling coast to coast to visit different craft breweries. The various styles and tastes provoked long conversations about the ingredients, the brewing process, and the details of owning a brewery someday. The chemistry and creativity put into craft brewing inspired us to begin our own unique homebrewing recipes. When it came time to put a name to this idea, it only seemed natural to say we are “analytical”.
It did not take long as homebrewers to decide to take the plunge to open a taproom that we felt would bring together friends, family, and community through beer. We took possession of our building in Lexington, IL in August 2021 and quickly went to work. It was truly a family and community effort to bring this vision to life, and we couldn't have done it without some great help along the way.
As our vision for the taproom came to life, so did the vision for the beer. We have a 5-barrel brewing system bringing creative recipes to life. We use the latest in brewing technology combined with traditional brewing techniques as well as a deep knowledge of the chemistry that is integral to the brewing process. This knowledge helps ensure a consistent, high-quality product delivered to each customer. We have 10 unique beers available with a goal for each patron to find at least one beer they love. We offer regular beers as well as rotating taps with new offerings to find your next favorite. Our passion is to offer a friendly, comfortable space for the enjoyment of our brews and connecting with those around you.
